If the two are separated properly, a problem on the office side has a much harder time reaching the machines that make you money. On top of that you want monitoring that actually watches the operational side, not just the IT side, so if something strange starts happening you see it early instead of after the line goes down.
And then the boring stuff that is not boring at all. Access controls, so vendors and remote support only reach what they are supposed to reach. Multi-factor authentication. And employee training, which I will say for the hundredth time is the best money you can spend, because most of these incidents start with a person, not a machine.
I want to be straight about this though. Nobody can promise to prevent all downtime or stop every attack.
